Seafood Au Gratin
Here's a Hot and Cheesy dish great for those cold nights
Serves 4
Ingrediants
1/4 lb cubed Gruyere cheese
1/4 lb cubed White Cheddar
1/2 cup Parmigiano Regiano
1 Qt heavy cream
1 lb Lg shrimp ( peeled and devaned )
1 lb Scallops ( Bay or Sea )
1 lb cubed Fish ( Bass , Black , cod ,)
1 cup white wine
1 small onion (small dice)
3 stalks celery (small dice)
8 Baby portabellas sliced thin
1/4 stick of butter
Flour 1/4 cup
Panko bread crumbs
Preheat oven to 375
In a sauce pan on med hi heat melt 1/2 the butter . When the butter is melted add onions and celery . Cook Veggies until they are soft not brown .Now add the cup of wine and cook until almost dry(Au Sec) .. Now add the heavy cream and whisk thoroughly .It will start to get thick so now start to add cheese .(save half of grated cheese) Turn down heat and add the cheese and whisk smooth ...
Taste this mixture and add Salt and pepper taste Turn off and put to the side.
The Seafood !
Season the seafood with pepper . ( I dont use salt on fish) Now heat the butter in small fry pan and brown off the Fish ,
Now take some cheese sauce an put it in the bottom of a Au gratin dish or large casserole . Lay the fish on top of sauce and cover the rest with remaining sauce . Top the dish with panko bread crumbs and remaining parm cheese and bake .
Bakeor 20 mins and serve with a nice wine and crusty bread

That sounds delicious!!! I would use garlic bread, but I like garlic. Thanks for the recipe, gonna use it next blackfish season!
